Chia Pudding + Mango Coulis

Mornings, especially in Florida with the never ending heat waves, can so easily slip into autopilot with coffee, emails, and rushing out the door. My client and now friend, Monisha Akhoury, whose background transcends culinary arts, purchased this gorgeous estate where every part of the interior of the home represented the four elements: earth, wind, fire, and water. There’s even a koi pond inside! The heat would be a beast most days, so she always spoiled our team with these amazing and refreshing treats. Simple, vibrant, and quietly powerful. This isn’t just a recipe but rather an act of care. For your body and your rhythm. When we choose foods that are both grounding and nourishing, we remind ourselves that’s it’s okay to slow down and enjoy every moment.

THE PUDDING BASE

  • 3 tablespoons Chia Seeds

  • 1/4 cup of Almond, Oat or Coconut Milk

  • A drizzle of Agave or Honey

  • Pinch of Cinnamon or Vanilla

CHIA PUDDING DIRECTIONS

Mix well, wait a bit, then stir again to prevent clumping. Then, let it rest in the fridge overnight. In the morning, you’ll have the creamiest, pudding-like texture waiting for you.

ADD IN THE MANGO COULIS

Spoon the chia pudding into a bowl, and pour over with1 ripe mango or even frozen works great and a squeeze of lime juice blended.
